    I WISH I was a crab cake

    2 wahoo steaks
    Beer (whatever you're drinkin' while you're cooking is fine, for me it's usually Corona)
    Old Bay
    Butter

    1/3 c. Bread crumbs, plain
    1 tsp. mustard powder
    4 tbs. mayo
    1 can water chesnuts, drained and finely chopped
    1/4 c. chopped fresh flatleaf parsley
    1tsp. fresh lemon juice
    peanut oil
    Salt and pepper

    Pour enough beer to cover the bottom (about 1/4") of a medium microwave-safe dish. Place the wahoo steaks in the beer, add a few slices of butter (2-3 per steak) and season with Old Bay. Cover with plastic-wrap and microwave for 3 minutes. Let stand 5 minutes before removing wrap.

    Once done, flake the wahoo with a fork, then move it to a medium bowl with a slotted spoon---leave the beer behind. Add to the fish the bread crumbs, mustard powder, mayo, water chesnuts, parsley, and lemon juice. Mix well and portion/pat out several cakes. Season the cakes with a little salt, pepper and Old Bay.

    Heat the peanut oil (enough to cover the bottom of the pan, but not so much that your cakes will be drenched) in a skillet until it's HOT--not smoking, but you want the cakes to get a nice crispy brown on each side---which for me is about 1-2 minutes per side.

    I like to dip my cakes in a little melted butter, lemon juice and Old Bay mixture. Let me know what you think...it may be an option for those with shellfish allergies...?

    IMHO wahoo is too good for this recipe. Any fish prepared this way will turn out really good. I keep the wahoo for steaks and use rockfish or whatever else is'nt all that great by itself. Even bluefish is pretty good in this recipe.
