    .....FOR THE PONEYTAIL.....WHY? CAUSE I LOVE HER AND SHE LOVES FOR ME TO DO DA COOKING!


    NOW AFTER 13 YRS...AND ON MY 3RD OVEN......I AM RUNNING OUT OF ....LET'S SAY DIFFERENT IDEAS

    PLEASE HELP ME PREPARE A FRIDAY EVENING DINNER....NO FISH AND NO RANGE RAT...I MEAN LAMB......PLEASE . I EAT FISH 24/7 IF WANT IT.... AND I HATE THE TASTE OF A RANGE RAT

    I MAY DO THE COMPLETE MEAL YOU GUYS MAY OFFER UP....OR I MAY PIECE ALL THE IDEAS TOGETHER....

AND MAYBE MUSHROOMS IF YOU LIKE EM ..... AND WHERE YOU HAVE MADE THE CUT IN THE LOIN STICK THE SLICES OF ZUCCINI AND SQUASH AND ONIONS, ETC. SEASON IT AND TOSS IN THE OVEN .......

    hmmm...

    Well...I’m not one to mess with tradition...but how about taking the night off and taking the lady out Friday night...a lil surprise dinner for the two of ya might pay back huge dividends...if you absolutely must cook...can't go wrong with some seafood linguini...scallops, shrimp...little garlic bread and a nice bottle of Riesling to wash it all down...you did say no fish...not no seafood...good luck!!!

    Diana's partial to chicken franchese when I'm cookin. Pound a couple breasts flat, coat in flour, dredge through a mixture of egg, salt, pepper and parsley for looks. Saute in butter till both side are golden. Then finish with white wine and juice of a couple lemons, maybe another pinch of chopped parsley

    Twice baked potatos and string beans almondine on the side. Don't forget the salad

    Also in my non seafood bag o'tricks - steak or london broil on the BBQ, chicken marsala, chili, pasta, burritos

    All depends on whether or not she likes spicy, but this has never failed me

    Roast Beef w/Spicy Parsley Tomato Sauce (serves 4 to 6 but I'm sure you can adjust it to your needs)

    Roast:
    2 to 2 1/2 lb sirloin tip or chuck beef roast
    olive oil (I usually eyeball most ingredients so I'll try to guess on the rest...lol) about 3 tablespoons of O.O.
    4 Roma tomatoes cut in half (season w/Kosher salt & pepper; you can also had some rosemary if you want)
    * in a heavy roasting pan or Dutch oven (high heat)...heat the olive oil, sear beef on all sides, turn off heat, place the seasoned tomatoes season side down around the seared beef...roast to desired internal temp. (30-40 minutes for medium rare to medium)
    * take out of oven and and tent loosely w/foil...let rest 10-15 minutes

    Sauce:
    1 1/2 cups fresh flat-leaf parsley
    2 garlic cloves
    red pepper flakes (about 1/2 teaspoons)
    kosher salt
    black pepper
    2 tablespoons red wine vinegar
    1/2 cup extra virgin olivve oil
    * put parsley and garlic in food processor...pulse until finely chopped...add red pepper flakes, salt, black pepper, red wine vinegar and roasted tomatoes from the beef pan...processed until pureed...add olive oil w/machine running

    Slice meat, drizzle sauce over meat and serve...Delicious!
