    Here's another that's soooo easy & one of my favorites!!

    Boursin Roasted Chicken

    1 whole chicken
    1 tablespoon olive oil
    Salt & pepper
    2 (5.2 ounce) packages of garlic/herb flavored cheese (the best is Boursin - easy to find at the grocery...little white box)

    * Preheat oven to 400 degrees...coast the bottom of a roasting pan or shallow casserole dish w/oil...Rinse chicken w/cold running water and pat dry...Season chicken well inside and out w/salt & pepper...Place chicken in the roasting pan and place one whole block of the herb cheese in the cavity...cut the remaining block into fourths and pat 1/4 of cheese spread over the breast portion of the chicken (remaining 3/4 leave at room temp while chicken is roasting)

    * Place pan in the center of oven for 10 min...after cheese on top has softened spread evenly w/a spoon over the whole outside of chicken...return pan to oven and roast chicken for about 25-30 minutes until golden brown on top

    * Remove pan and turn chicken over (take a bit of the melting cheese in the cavity and spread over bottom/back of chicken)...roast another 25 minutes until that side is golden brown

    * Remove the pan one more time, reduce the temp to 375 and turn chicken over again...cook until chicken is done (approx. 20-30 minutes)...remove from oven and cover w/foil

    * Remove as much fat from the roasting pan as possible...add 1/2 cup hot water and remaining 3/4 cheese to pan...remove any other cheese from cavity of the chicken and add

    * Carve chicken and add the juices to the roasting pan to mix w/Boursin, drippings & water...serve sauce w/chicken

    Trust me...yummmy!!!

    Ok Big Dog-- this one ain't for you so quit your belly aching and cook it on up for the Girl:
    Nice Friday evening treat for da Ponytail.
    Go get a London Broil and marinate it in Zesty Italian Dressing all night. Add a bit of Balsamic Vinagar and about a half glass of wine from da frig. Now poke it good with a fork first. and marinate it overnight in the frig, Or all day tomorrow, but leave on the counter (room temp will let the marinade do it's thing quicker).
    I know you ain't big on Yellowfin but go buy her a nice Yellowfin Steak (it won't kill you)--- a nice fresh big ole thick ass Tuna steak. Grind up some pepper (don't even think about cheating and using the pre-ground in the cupboard), and coat the Tuna good with it and set it back in the Ice box.
    Pick up some green salad fixens--- it ain't gonna kill yas, just do it.
    Make up a light home made salad dressing--- nothing with dairy in it (no ranch or Blue Cheese)-- you'll figure something out---- and no damn French Dressing neither!!!
    Grill that London Broil till Medium Rare--- hey, you don't have to eat it, its for her-- will take about 15 minutes tops--- I mean it, don't cook the shit out of it.
    Now get ready to sear her some of that Tuna--- you know how to do it-- 6 to 8 seconds per side--- hot ass pan, you know.
    Mix up some soy sauce and a smiggen of Wasabi.
    Slice that London Broil across the grain thin as you can and the same with the seared tuner.
    Arrange the slices all pretty for her on a plate with some fancy carrot thing or something.
    Set down and let Ms Jane relax and enjoy a filling yet cool summer time meal on a wonderfull Friday evening-----
    Oh, and some Sourdough Rolls would be good too.
    You can run to Bojangles after she goes to bed

    Go to 30 minute meals or semi homemade. Simple food that taste really good ( and you really can make most of the stuff in 30 minutes).

    Or one of Randy's favorites..fish tacos. Take some fish, whatever kind you've got(mahi works fabulously). Bread it and fry it or grill it. Use the same condiments and garnishes that you would for regular tacos except use warmed flour tortillas instead of hard taco shells.

    Following that same train of thought, you could make taco salads. Nice green salad topped with taco meat, cheese, salsa with some chips to add crunch.

    Greek guacamole salad

    Try it Marty. She'll love you for it

    2 or 3 RIPE avocados, peeled and chopped thick
    2 medium GOOD tomatoes ($3.99 kind), chopped same size as avocados
    Half, or less ,of a medium red onion thinly sliced
    Fresh crushed garlic, 2 cloves (optional)
    Two fresh chili peppers (or one red chili and one green serano) minced fine
    Lots of finely chopped fresh cilantro (don't be shy here!)
    Pinch or two of cumin powder
    Sea salt & fresh ground pepper to taste
    Splash or two good olive oil
    Juice of one lime. May be a bit more

    Combine all ingredients in mixing bowl. Season, taste and let chill before serving.

    Ok, here ya go. This is a family recipe that has been handed down "verbally" over the years. The quantities are not exact and can vary according to taste!

    5-6 lbs ground meat
    1-2 onions shredded
    2 eggs
    4 slices of bread
    baby carrots
    small red potatoes
    beef broth (can be one cup of water with beef boullion cube)
    stick butter
    chili sauce

    Put the slices of bread in a bowl and cover with warm water - let sit. Put beef broth and butter in a small saucepan over low heat.

    In another bowl add the ground meat, onions and eggs. Squeeze the water out of the bread and add to the ground meat. Salt and pepper to taste. Roll up your sleeves and dig in with both hands to thoroughly mix up the ingredients.

    Put the meat in a large roasting pan and shape into a loaf. Arrange carrots and potatoes around the loaf. Pour chili sauce (entire bottle) over meatloaf and spread with spatula. Slowly and gently pour the beef broth mixture over entire meatloaf (being careful not to wash off the chili sauce) and carrots and potatoes. Try to moisten everything so that it doesn't dry out during baking.

    Bake for approx 1 hour on 400 (depends on your oven). Let cool for a few minutes, slice and enjoy!

    Also excellent for meatloaf sandwiches as leftovers the next day.

    I have also varied the recipe by adding a layer of cheese under chili sauce or adding mushrooms or whatevah!

    Bone in rack of lamb with an anisette demi-glaze over a bed of wilted greens in minced garlic and olive oil, I will see if I can get you the recipe after my meeting. I will be back by 4pm...

    Or

    Shrimp and Sea Scallops in a garlic and shallot cream sauce over pasta...

    Heres one for you very easy and soooo gooooood!!!Get a chicken breast and slice into small strips.use 2 breast.Throw chicken in a lunch bag and add some flour shake a couple minutes thus lighty coating chicken.Grab a big skillett and pour olive oil to coat.Add chicken.While chicken is cooking in the skillet add garlic.I love garlic so I use ALOT!!!You can use minced or powder I use both.Just make sure chicken is almost cooked all the way through before you add garlic.When chicken and garlic are done turn down heat and add a half a stick of butter fresh mushrooms and onions{1 large onion sliced will do} and 1 bottle 16 fl oz of Holland House Marsala cooking wine you can find it in any grocery store.Let simmer till onions are cooked well enough you can see thru them if you know what I mean.In a big pot boil water for pasta.Add a box of your favorite pasta "spaghetti or linguine and cook.When pasta is done add to chicken mixture and stir in.If sauce is to thick add a little flour not much and this will thicken sauce.Plate it up add a little fresh basil on top for color and your in.Serve with fresh italian bread.Marty in your other thread you were talking about reasons to live in N.C.I wish the hell I could get my hands on that sausage you cook down there that looked so good.I have never seen it like that it looked like a loaf of bread!!!Everyone let me know how you like the Chicken Marsala..Hope you all enjoy it!!!!!
