We take an ice pick and stick it through the crab at the tip of the "male thingy" and it kills them instantly. Then rip the shell off and "hydro gut" them with a hose. Then into the steamer with a little Old Bay. None the finer.

Several years ago someone told me about the clean them, then cook them, and I will never have them any other way. The meat is also a lot cleaner when you freeze it. This past weekend was my first crab trip of the year and we got our two bushels. Last year I started putting hockey tape on the fingers so I would not tear them up when ripping the shells off, this has been a huge help.

I throw them in whole and alive seasoned with Old Bay and crushed red pepper. Steamed with vinegar and beer. The mustard is the best part.

Thats the same way we do them. Pop off the shell and guts, sprinkle with some Old Bay, and they are delicious!

You're on the right track Bobby. Try this sometime. Render a lb of salted fat back on the stove and pour over those pre-cleaned and seasoned crabs 2 minutes before they are done.--- Not too much (don't want them greasy).--- it don't get any better.
