looks great. Is that just wrapped in bacon or did you put some other seasoning on it?
i have a freezer full of wahoo and i am looking for new ways to cook it.

I just sprinkled seasoned salt on it and wrapped it in bacon. Came out a little dryer than when I use the mayo coating, but it was deeee-lish. And will be better tomorrow![]()

Combined your two recipes ... with a little twist. I used 1/2 Chipotely pepper spiced mayo, 1/2 regular Hellmans mayo, and some Old Bay an dmixed it all together in a bowl. Then I covered the Wahoo in the mixture, wrapped them in thick bacon and grilled.
IT WAS THE BEST FISH I HAVE EVER PUT IN MY MOUTH!!!!!!And my wife agreed. It was so moist it was like a piece of filet mignon.
And.... this was "product of Ecuador" Wahoo from the Harry Peter! Imagine what it will be like with a fresh steak. MMMMMMMMMMMMMM .... MMMM.
By the way .... ate it with some boiled garlic Kale with a good balsamic vinegar, a purple sweet potato with butter and brown sugar and a nice glass of red wine. DELICIOUS.
Nope you are correct. It never get's old. Damn, that made me hungry and just might have to eat some frozen.

The mayo, enhanced with Seasoned Salt, does something majical. I need to get on Nautis program with the fancy mayo spreads though. Old plain mayo isn't cutting it anymore after seeing that.
