    Grilled Veggies Help?

    I have had them in many resturants but never cooked them at home

    Can anyone give me some good pointers or recipes for grilling them at home?

    I have eggplant , squash, artichokes and probably other veggies I forgot that I bought the other day

    Mary,
    Slice them 1/2 - 3/4 inch thick, spray both sides with Olive Oil PAM, add any seasonings or rubs you like and put on a hot grill...

    I try not to leave the veggies on long enough to wilt, but just long enough to get some nice grill marks and warm up...

    Rub them with a little olive oil and seasoning, I use lemon pepper or basil and Garlic. Like ctl said don't wilt them just get good grill marks on them. I wouldn't do the artichokes that way, but you can roast them. I guess you can poach them and grill them but the shape of the chokes makes them tough to grill
