    Grilled Shrimp and Pepper Salad with Portabello Mushroom and asparagus spears

    Please bare with me Im terrible at writing recipes but this is good stuff

    1 head of Romaine lettuce
    2-4 peppers red, yellow, and orange
    Shrimp
    4-5 portabello caps
    extra virgin olive oil
    balsamic vinegar
    skewers

    mix vinegar and oil

    chunk peppers into 1" pieces and place on skewers with shrimp slather with olive oil and place on grill

    Take whole head of lettuce and liberally sprinkle with oil and vinegar place on grill turning frequently to prevent burning

    brush portabello caps and asparagus with oil and place on grill

    Once its done break up lettuce throw in a big bowl with peppers and shrimp.

    Serve mushrooms and asparagus spears on side.

    You can substitute just about anything for the shrimp. Like mako chunks, scallops, tuna, venison or beef.

    Its tasty and quick....
