Goose Stew
I saw Wahoo's post about needing more recipes here so I thought I'd put one up that I did recently that worked out pretty good. First I'll put down what I did and then I'll put how I'd change it. Disclaimer #1 - I never really measure anything when I cook so I'll guess at the measurements. I only got 1 goose, so that's what this is for...
Breast out goose soak breasts overnight in saltwater in the morning cut breasts into bite sized pieces and marinate in spicy tariyaki sauce put a tablespoon of olive oil in a slow cooker around 2-3 in the afternoon place meat in slow cooker add a teaspoon spicey cajun powder add a clove of chopped garlic I put a small amount of other spices in but I can't remember what they were -I think it was a dash and a half of sage and some thyme stir contents add a bunch (I think I used a pint) of baby potatoes (cut the larger ones up) - looking for bite sized add some cut up turnips (I used 2 medium - cut bite sized or smaller) add 3-4 medium onions (cut into quarters or eighths depending on onion size) add a bunch (I think I used about a half a cup or more) of baby carrots add a bunch of cut up celery (I cut up 3 large stalks) add enough beef broth to almost cover contents of slow cooker slow cook on the highest setting for at least 3 hours add a can of sliced button mushrooms 1 hour before serving and lower the heat to medium serve over egg noodles - with fresh bread Here's what I would do different next time I would beat the goose breast with a meat tenderizer prior to cutting up add some corn starch to the mix when I added the mushrooms I will do this again since my family all liked it - even my wife who dislikes goose. ![]()

I always soak my honkers in salt water. After a few hours I soak them in milk for a couple more hours. Takes the gamey taste out of them...
