Golden Wahoo Nuggets

Well, it's been a depressing spring for us fresh fish enthusiasts (at least for me it has been). So, yesterday I thawed some Wahoo steaks (bone in) from last Summer. They were vacuum sealed and looked very good.

I could not decide what to do with them so I carefully cut the 4 "medallions" away from the bone and sliced the thicker ones in half (must have been a nice Hoo).

I dipped them in eggwash and lightly coated them with house autry. I then put them in some hot veggie oil (would have preferred peanut oil but I did not have any). While they were frying, I coated the exposed portion (only used a thin layer of oil) with lemon pepper seasoning. Flipped them over and seared the seasoning side as well.

Damn that was good.

The good news is it looks like I have 3 or 4 more good pieces frozen and will have to try that Salad recipe.

Was the wahoo pissed when you cut his "nuggets" off? I have had my finger in many a bluefins butt hole, but I have never held a wahoo's nuggets.
