    fried gizzards and turnip greens...

    I had some good eating tonight that I just had to tell yall about. Hadn't had chicken gizzards in quite awhile so....I decided to have an Eastern Shore delicacy tonight. Fried chicken gizzards and a double helping of turnip greens...it may get better than that but I haven't anything better in a long time! Make your tongue beat the roof of your mouth to death.

    Crisco?? You gotta be kiddin!!! I guess the fact there is no trans fat in the oil makes up for all the crap in the gizzards!!

    The gizzards came from work. They pulled some for one of our customers that serves soul food and country cooking over in Southern Maryland and I snatched 'em up!

    CL, do you really think I worry about being trans fat free???? I use Crisco cause that's what mom used!

    Ive never done gizzards but I do like the livers.... How do you cook those there innards... Ill try anything once, any tips on cooking them, Ive had the greens before...yummy...

    To be perfectly honest, I don't think I have ever fried them myself, but my mother cooked them at least once a month when I was growing up. A requested treat while visiting now.
    First thing to understand is that gizzards are tough-- plain ole fashioned tough as hell. My mother would soak them overnight in milk (butter milk if we had it). Flour w/pepper and fry-- real simple.
    I tink a better way is to par boil them for a few minutes to untoughen them-- then dredge in flour and fry.
