    Forest Stew

    Howdy Boys and Girls. Sorry about another game inspired dish but I'll get to other things and seafood soon.

    Stew is easy to make but hard to put into an exact recipe I'll give you all basic guidelines.

    Meat, 1 whole rabbit, 1 whole pheasant, 3/4lb of vennison chunks
    1st step take all the meat of the rabbit and pheasant (it sounds harder than it really is, just start cuttin and scappin and what ever you don't get cut off you can peel off when your stock is done)

    Save your bones for stock

    start browning your bones in a large stock pot, while this is going on cut up 2 lge onions 4 stalks of celery add these mid way through the browning process, cover with water and add 2 Tbsp of thyme and a tsp of black pepper corns, alloe to simmer and reduce by one third. strain keep the bones to peel offf remainding meat. set your stock aside.



    put in a bowl 1 1/2cup flour, and a Tbsp paprika garlic powder and black pepper. Toss the meat in the flour to well coat it. add some veg oil to a lge pot, brown meat

    while browning get two onion diced 2 ribs of celery, 1/2 a lb of crimmini or babay bella mushrooms quarterd. a 1lb bag of baby carrots add them to your meat mix around and allow to sweat add 1 cup of white wine, and 1/2 cup good balsamic vinegar. cover with stock you made before and allow to simmer 2 hrs adding more stock if it gets too thick. Add 4 diced potatos cook untill taters are done.Salt to taste

    cook off a pack of egg noodles and some garlic bread and you have a wonderful winter stew

    Been doing good now that we are back to fishing again! We just moved the Contender down to Cape Charles until mid Apr. for the Bass season down there.
