    First fresh tuna for the year

    A very good friend of mine just returned from NC with some tuna steaks and got the call that he would drop off some thurs. Like hell I'll drive the 15min to your casa bro I'm havin grilled tuna in th 40 degree weather tonight. A little freshly ground sea salt cracked black pepper and garlic drizzle a touch of extra virgin OO.
    Red bell peppers sliced in slabs and some red potatos tossed in some italian vinagrette. Sliced some cukes and white onion salad with champagne vinegar salt peper and sugar in to a bowl and let chill for 1hr or more.
    Throw the potato and peppers on the grill get them almost done, move to top rack.
    Let the grill get real hot again and on goes the tuna sear turn sear turn flip sea and off rare fo me med rare for my dad and kids. Med for mom "who bitches I didn't cook it enough" but she can go to friggin McyD's before I'll cook a fine piece of tuna past med, shit i have a hard time cookin it to med. It's a damn shame.
    Simple but Oh so good. Come on Fishin season the grill beckons. Tommorow we may pan sear with the cast iron (spose to rain) Thanks Tim

    You even let it close to a grill shame on you eat it raw.
    I think you are rather like me I eat beef seared one side only bring to the table when in a restaurant people get upset when it comes raw otherwise eat it raw but meat must be aged real proper minimum 30 days
