    Filet Style Wahoo

    I've never been much of a fan of steaked wahoo or King, so I started filleting them to get all of the red out, which left me with 4 "loins", but it takes a pretty big wahoo to get steak sized sections off of these loins - At first I started
    cutting them into 1 1/2" chunks and putting them together on skewer like a kebab - that way I could make sure the grain was running up and down on the grill, then I got to thinking (oh no) and started putting these chunks together
    to make 1 nice steak - Wrap a slice of thick cut bacon around it and pin it with a toothpick

    When you grill it, the bacon will shrink up tight and hold the whole thing together. The fish stays really moist.

    Just brush on some olive oil, dust it with black pepper and maybe some seasoned salt and you're ready for the grill.

    Been doing this for some time.... works great... i tend to chop a load of onion, red & green bell pepper + cubed wahoo add to a ziplock with olive oil and a generous sprinkle of cajun seasoning marinade for an hour or so then thread on some soaked bamboo sticks...
