Depends on the dish, but Tamarula and Shiracha are my faves.

I'm on the shiracha train also, I love it with some asian dishes. I have been in Charleston for the past few days and have found this nice little store that specializes in all types of hot sauces and hot jelly.

Tropical Pepper Company's Scotch Bonnet sauce, quite tasty on fish! For every day use you can't go wrong with Crystal. I have some sauce from Antigua called Suzie's that will light you on fire if more than a drop is used. My buddies like it on their oysters and I'm happy to let them enjoy the burn!
