Ok whos got one... Its that time of year. I have one in the collection from yesterdays mess and plan to add a bunch more today now that I'm switching back to the blamerator...

All I use to do with mine was marinate them in your favorite flavor and then smoke them in a electric smoker for 3 hrs. If they aren't fully cooked then bake till done. This is just for the breast. That's all I used to save from the bird.

Crab mustard is good
Marinate with your favorite flavor, wrap with bacon, grill. Enjoy. Makes a great appetizer.

Very simple & my favorite way:
Pat dry breasts (no marinade), sprinkle w/ black pepper, sprinkle (or roll) pressed garlic, wrap w/ bacon, saute w/ small amt of Olive oil till med Rare. discard bacon

Put pepper jack cheese on the bottom, slice of fresh jalepeno on the top wrapp with bacon and put it in the pit.Thats south texas style.

Leave the bacon on it......... its good!!!!!!!!!! Deep I have a student in my class whose Dad cooks the best Dove. I'll get the recipe for you. In fact, he's bringing me some tomorrow.

Marinate in 7 up and lemon juice wrap in bacon grill to med rare.
Also another way to go :
roll dove breast in flour with black pepper and lil salt. 1 tbsp of margarine melted in pan. brown dove breast in pan. Remove breast, sautee onions.
Make gravy from sautee'd onions with 1/2 to 1 cup of water to deglaze brown dove meat pieces and browned gravy roux. Thicken gravy by simmering. Put doves back in. Simmer till tender, last few minutes follow bisquick dumpling recipe and spoon batter on top of all. Cover 5-10 minutes and dumplings will be done. Basically like a country style steak dove recipe with dumplings and gravy.
