Thread: Costa Ricain Rice & Sausage Dish

    Costa Ricain Rice & Sausage Dish

    Been a while since I posted something in the food forum but thought I would share this dish of mine with you...
    2 cups wild rice or 5 min. rice
    2 large carrots
    2 medium onions
    1 can Lesueur sweet peas
    1 can chicken broth
    one pound hot or mild sausage, deer, duck, moose, elk whatever....
    1/4 cup Lizano Salsa...
    coarse grate the 2 carrots, should be about 1 & 1/2 cups
    finely chop the 2 onions, I use a jar chopper for this...
    Cook the rice to 3/4 done ( I use the juice from the peas along with the water to cook rice) and add the 1/4 Lizano's Salsa.
    Cook your sausage so that it is finely chopped while cooking
    In a 10"x 14" Pyrex baking dish, add all the ingredients and pour over the can of chicken broth over mix
    Have oven heated to 350, cover and bake for 30 mins.
    remove from oven, stir and bake for another 30 mins. uncovered.
    Serves 8, although this is a meal by its self, I do like it with southern fired, Duck breasts or deer steak over the top of this dish

    I know that sauce is prefered, but would, say, tabasco work too? I think I'll try chorizo or anduie sausage for the meat. Nice spicey sausage will add to the kick.

    If you guys have never tryed this salsa, you should. I don't know how to discribe it but in CR it is on every table, like our ketchup.
    I remember in 89 on my first trip to CR discovering how good it was and coming through customs with a case of Lizanos and 10 keys of coffee beans, I had to buy another bag to bring all of it home... Both have been in my frig ever since.
    You guys can sub whatever you want for the Lizanos Salsa, but it will not be the same dish...well worth the order...

    Just picked up a couple bottles Lee. Thanks for the tip - Had to splurge and order the dark chocolate covered coffee beans as well. Man I love Costa Rican food. There is nothing better the stopping at the Soda Bar at the turn to Los Suenos every morning for their Gallo Pinto. Now that's a breakfast!!!!!!!
