I have not caught or eaten bonito since the early 90's but I always cooked them on the grill (steaked or filleted) with lemon, butter, and whatever spices I had on hand. As with any tuna, do not over cook them. Hope you enjoy them.

Whatever you do don't freeze them, They will turn to mush, from my experiance. The best way I've evr done them is to smoke them they are very good that way.
But Heres a recipe to eat them freshly caught Cut them into medallions or small steaks Sprinkle with salt pepper and coat with olive oil/ put aside This time of year with all the fresh produce around. I just take veggies from the garden: 1 red pepper diced 2 jersey tomato's diced 1/2 small jalapeno (optional)finely diced 1 clove of garlic chopped keep seperate basil chopped green onions chopped Heat a skillet (cast iron preferred) get very hot Do Not add oil to pan (the oil on the fish should keep it from sticking) Sear the fish on both sides quickly only a few minutes on each side you do not want to over cook the fish. Remove fish from pan add first group of ingrediants let simmer for a few minutes but still allowing peppers to retain there crunch If veg appear to dry add some liquid, lime juice/ white wine add basil and green onions stir mix about a minute Pour mixture on top of fish and enjoy simple but delicious. Well could not catch the good tuna so i had to settle for bonito. Cooked it to the recipe above and it was delicious.
