Conger Fish
Has anyone cooked or eaten conger fish, or as they call it here in Costa Rica congrio? The guy at the market said it is fantastic. Does anyone have any suggestions on cooking this eel like fish? I am hoping to cook this delicate little sea monster up tonight.

Conger
To begin with, conger is great to make fish fumet' (stock) So if you do buy it, make sure to get the bones to make stock. PM if you need instructions. But once you do, a great fish stew can be made, using conger chunks, grouper and shellfish.
On the other hand, it is a bit of a hassle to clean, so if the fish monger will make you some medallions, wrap it in bacon (use toothpicks or string) and grill or Saute. If Saute: do so in butter, remove when the bacon is crisp and pour a little lemon, wine and capers and reduce into a sauce. Kahi |

I was with Seaker over Memorial Day. We caught my first Conga. Ate it, breaded and pan fried. A little butter poured over it.... pretty darn good.
Firm white meat, so I would assume there are a billion ways to cook it... Lots of small bones, so be careful. Mike |
