Clam Chowder

Here's a great clam chowder that you have got to try:

Clam Chowder Recipe
1. Bucket of Clams (all sizes) Set the smallest aside for later
2. Put all the clams in pot and cover with water, boiling until all are open , strain broth into pot to remove any sand
3. Dice 1 bunch of carrots , 3lbs boiling potatoes, & 12 Roma tomatoes, add to broth after boiling in 4 quarts of water
4. Add 1 quart of tomato juice
5. Add 1 cup red wine
6. Sauté 2 large yellow onions, 2 green peppers, 1 red pepper, 1 red hot pepper, 1 jalapeño pepper and 2 large spoons of crushed of garlic, add to soup
7. Add 1 Tablespoon salt, 1 Tablespoon black pepper, 2 Tablespoons dried parsley & 1 Tablespoon dried basil
8. Boil 1 lb potatoes until soft , add to blender with enough of the water to puree and then add to soup
9. Simmer and chop up all the clams and add to soup
10. After a few hours add the smallest clams to the soup for the “presentation”
Note. The longer it simmers the better it will be, simmer with the cover on.

Lets go. Post up a NE white clam chowder recipe. Dont be shy ! I would love a nice thick white recipe for this winter.

Here you go... New England Style chowdah

Two dozen chowder clams
Six strips bacon
One or two chopped onions (depends on your taste and size of onions)
Four cups diced potatoes
Diced garlic to taste
Two cans evaporated milk
Enough 2% or whole milk to fill the two empty evap. milk cans
1 tsp. salt
1/4 teaspoon white pepper
Salt, Old Bay, Black pepper and paprika to taste

Steam open chowder clams and keep the clam broth. Fry the bacon in a large skillet and set the cooked bacon aside. Remove excess bacon grease (leave enough in the skillet to saute the onions and potatoes.) Add the garlic and salt to the sauteed onions and potatoes and mix well in the hot skillet. In a stock pot, add the clams, clam broth, bacon, evap. milk, and two cans of 2% milk and remaining spices. Add the skillet contents and simmer on LOW heat. If you cook on higher heat the evap. milk will scorch on the bottom of the pot. A good solution is to use a double boiler instead of a single stock pot. To thicken the chowder, add some flower and corn starch and stir well.

This works will with cod, haddock, or cusk too for fish chowder.
