    Chowdah

    1 Lb Haddock Filet (cut into cubes)
    2 Cups Diced Potato, cooked 1 Cup Diced Celery
    1 Cup Diced Onion
    Pinch of Fresh Dill *
    1/2 Cup Butter
    1/2 Cup Flour
    1 Qt Fish or Vegtable Stock(Fish Stock, Fish Flavored Bouillon Cubes and Water)
    1 Qt Half and Half (or Milk, Evaporated Milk)
    Salt to taste

    Saute celery and onions, cook for 4-5 minutes. Make a Rue by melting butter and adding flour (helps thicken the stock). Add stock, salt, stirring constantly. Bring to boil. Add Haddock, cooked diced potatoes, and half and half (or milk). Simmer until fish is cooked (8-10 minutes).

    Note: Can substitute clam, corn veggies polluck, salmon for haddock.
    Another suggestion is to use 3/4 Lb Fish, 1/2 Lb Scallops, 2 cans Diced Clam, 1 Container Fresh Crabmeat.

    * Omit Dill, but can add pinch of fresh Thyme and pepper

    Sounds good...I like to fry up a bit of bacon and use the oil from it for my veggie cooking...then garnish chowdah with it...
