    Ceviche

    Lets see some ceviche recipes

    Best I've ever had was in Cancun at an open air market next to a flats charter fleet while waiting for my guide to return me to my hotel. Squid & shrimp

    Cut up whatever seafood or fish you want to use as long as it's fresh!

    Combine lemon juice and red wine vinegar (mostly lemon juice).
    Place cut up seafood in a bowl and COVER with juice & vinegar mixture and place in fridge.

    Chop cilantro, red onion, and roma tomatoes (remove seeds and pulp).

    Sometimes I dice some cucumber an add that too.

    Once seafood has been cooked drain juice & vinegar.

    Combine seafood with chopped cilantro, red onion, and roma tomatoes, squeeze lime juice over mixture.

    Add some avacado to top, grad some tortilla chips and a cold beer and go to town!

    I am going to try this one...looks very good. I also make ceviche with king mackeral. I think an oily fish also works well.

    I live in Isla Mujeres My Mexican neighbors make all kinds of different Ceviche. The best I have had was with a Barrel fish the other day. Simple to make cut the fish in small pieces add cilantro and lime. We were out fishing when he made it.

    Dolphin or wahoo cut into small small cubes

    squeeze fresh limes over the fish. and refrigerate for twenty or 30 minutes

    add
    finely chopped onions
    cilantro
    jalapenos (optional)
    salt and pepper
    1 basil leaf
    roma tomatos again with puple and seed removed
    a couple squirts or worcestershire
    a small can of V8


    refrigerate for another 20 minutes. remove basil leaf and add salt to taste

    I have been eating ceviche since I was 5. The guatemalans make it this way and I just tried it last yr. It is the best I have had. In my opinion it is better then how anybody else makes it. I have heard the peruvians make it very well as well but I don't know what they add.

    If I have one, I will substitute a squeezed Orange in place of a lemon/lime. Adds a "sweetness" to it.

    Absolutely the best, I was doubtful when a friend gave me the recipe. But it is the best cevechi I have ever had.

    BLUEFISH CEVECHI
    1. When Caught Immediately Bleed, Gut and Ice the Fish.
    2. Fillet and skin the fish.
    3. Cut of the Blood lines out of the fillet (remove the red meat)
    4. Mix cold water Ice and Sea salt or Meat salt together in a bowl. Soak fish for 5 minutes.
    5. Remove and pat dry with a paper towel.
    6. Wrap with Saran wrap and place in freezer for 20 minutes.
    7. Cut fish into thin strips or chunks.
    8. In a bowl squeeze half a lemon and half a lime add Pepper, salt and Mix
    9. Cover bowl with saran wrap and Refrigerator for 20 minutes.
    10. Enjoy!
