    Carolina Deer VS Jersey Deer

The difference in the meat has to come from the difference in the diet.

Cape May deer= swamp grass mixed with sticker bushes and pickle weed, Acorns.

Wahoos fox hole deer= Sweet potatos, soy beens, corn, grapes, milo, and some other kind of little tree we found by one of Wahoo stands.

I have eaten an entire Carolina deer in a week. Everything except the rib meat. The taste of the meat is absolulty 100 times better. I cant believe it I hav tricked two ppeople into eating it telling them It is beef. One didnt believe me the other will never know cause if she did she would hire somone to end my life. The first batch was marinated in a A1 sauce marinade. The second batch was cooked slow in a crock pot with just salt, both were great.

    Thanks again Wahoo

    Bobby,
    That's Awesome!

Just wondering, have you ever had a Deer from Bucks County PA? That's the only Whitetail I have ever tasted other than North Jersey Deer.
I do know that it all depends on the Deer's diet, you are 100% correct there! By the sounds of it, It sounds like it would taste better than the Deer around me. I might have to see if I can get a trip together down there.

And BTW, that offer still stands if you would like to give it a try up here.

Diet does it all... Our deer here in Florida taste kind of blah... I just had a section of flank. Our animals, be it pig, deer, or turkey seem to retain a bunch of water. If we get them near the back of the property they often have a tinge of orange taste. Proximity to the grove I guess. Near the entrance they are blander...
In some jersey places to me they taste like "deer" those ones seem to have a lot of corn in the diet. If I head north to the hills they get even stronger with a pine accent from eating cones or nuts up there. Theres a piece that I work where they are acorn intense along with pumpkin, suburban lawns and gardens. Man! Those ones taste like beef.

    Paul,
Have you ever tasted a deer from Pa? I was just wondering since it was the only Whitetail that I have ever had if they taste any better or worse than other ones?

Yes I have tasted them from two areas. One was farm area in the south. Like the central jersey ones they were a touch gamey, tasting like "deer". Corn and or grain seems to bring that out in them.
One from farther north was like the ones from north jersey but even more piney... Thats not saying that they may not taste different even a mile away. Lotsof apples, acorns, etc could make a world of difference. Some pine barren ones vary over short distances and time of year. Early season ones are heavy on the blueberries and that makes the trip in taste. Late season they're back in the seed and scavenge taste.
My mate virtually lives off eating deer for months on end. Now he could tell you almost exactly what each deer has been eating... I can only generalize...

    Thanks!
Most of the deer from where I hunt mainly eat corn, some apples and whatever fruit they can get to! Now the deer at the camp we have in Potter county are really gamey! There's not much to browse on up there other than small trees and sprouts of trees.I know their diet says it all! I like both, but prefer the ones down by me!
Sounds like the deer in Marty's area are eating real well!

I have a friend that processes deer and you should see the way some people take care of the gutting! WOW! It's bad! Put it this way, you wouldn't catch me eating any part of some of those deer I see come thru there!

    Marty,
I just got the OK from the boss! I'd love to come down! I'll be calling Bobby tomorrow and set something up with him. Looking forward to this! Can't Wait!!

since we are talking about deer now, let me ask this. those of you that hunt deer consistently, do you take the deer back to camp, then clean it? or do you prefer to field dress it right then and there? me personally, I like to wait until i get it back to camp to clean it. that way you just throw it up on the rack, ankles first, and dress it out as it hangs upside down. the ribs hold all the guts in, and you can move the bladder out of the way without puncturing it. and the deer stays off the ground the whole time
