CAPT MARK'S LAJITAS LOCO CHILI

Alright... Happy New Year! I thought today would be a good day for chili, after all, it is 65 degrees here! So... here it is, the end all Chili Recipe. Sure, you can adjust here and there, but for a GREAT BASE (and a winning chili), this one will do it. I can not begin to tell ya how good it smells in here right now, but take my word for it, tonight when the Hawaii Warriors best the stuffing out of the Georgia Dawgs.... I'll be enjoying a nice bowl of this Texas delight!

CAPT MARK'S LAJITAS LOCO CHILI

Step 1
2 lbs. course ground beef (chili grind)
1 TBS Cooking Oil
1 TBS Granulated Onion

Combine and lightly brown meat, simple enough!

Step 2
Add:
1 Can (8 oz) Tomato Sauce
1 Can Beef Broth (14.5 oz)

Cook for 30 minutes... again, simple enough.

Now for the "goods". I like to combine each "batch" into one small mixing bowl. Hell, I even package this up in little glad containers for ranch and write BATCH 1 / BATCH 2 on the containers... all dry, all pre-mixed.

Step 3
Add BATCH 1:
1 Beer...Drink it.
1 Beer, add to pot
1 TBS Light Chili Powder
2 TBS Dark Chili Powder
1 tsp Garlic Powder
½ tsp Salt
½ TBS Ground Cumin
½ tsp Cayenne Pepper
½ tsp Black Pepper
1 tsp Chicken Granules (or 1 cube)

Let this cook for 1 hour

Step 4
Add BATCH 2:
1 TBS Light Chili Powder
1 TBS Dark Chili Powder
1 tsp Paprika
½ TBS Ground Cumin
1-2 tsp Brown Sugar

Add beer if needed, but don't let it get too "runny".

Leave covered and simmer for 30 minutes.

Be sure to have your sides of chopped onion, cheese, etc. I like a little Jalapeno Cornbread to go long with it.
