Calamari Salad

Heres the deal...its that good. I dont measure so all the numbers are guesstimates..enjoy this one, I do.

2 pnds calamari rings
3/4 pnd cubed feta cheese
3 lemons
1/8-1/4 cup of good olive oil
couple snips of parsley...for good looks
three different types of olives ( greek, calmatta, etc..)
salt and pepper


Boil the rings and cool them down with a cold water rinse, put the calamari in a deep bowl, quarter the lemons and squeeze the juice onto the calamari then toss lemon quarters into salad as well, add the olive oil,toss your salad,
add the olives and toss the salad, add the salt pepper parsley and feta cheese, proceed to toss yoursala for the last time, chill it and lett sit for a bit, it gets better as it sits for a couple hours...serve cold...
