    Boiled Striper? Damn right ...

    Here's a funky striper trick that I picked up this summer, and I actually tried it with great success.

    Take a thick striper fillet and cube it into about 1-inch pieces. Boil 2 quarts of water with 1 cup of sugar, and once it's stirred in, drop in the fish cubes. They're done when they are floating on the top.

    Serve with melted butter, and you will be amazed at the uncanny resemblance to scallops.

    And please don't say "well then, why don't you just buy scallops?", because they answer is "that's not as cool as this simple little trick is."

    I prefer steamed over boiled and it is a great way to prepare BIG FAT striper filets, then as well you can use a good crabcake recipe and make great fish cakes broiled or deep fried, if you make them small you can call them fishballs but it will raise some eyebrows

    Oh yeah...real canny similarity to scallops or with some imagination lobster.
    I always save the thick pieces to do this way and have a lobster appetizer. Definitely a tasty way to eat striper if you are sick of eating striper !

    I steamed some the other day...

    for making Rockfish cakes. I intentionally left all seasoning off the fish for the steaming step of the recipe. When I tasted the rockfish without any seasoning I could not believe it. The fish is incredible and I nearly filed up on it plain before crabcake one was finished. After steaming and putting a little butter and pepper on it I wanted to slap myself for ever cooking it drowned in spices. Great trick there yankee pride. Boiled nuggets for lunch Saturday!
