Blackened Bunker



Next time you have some bunker left over from an offshore trip, don't throw them beauties out. This will also work with Bally hoo but you dont have to filet em, Treat em like sardines.

Filet a few, Dredge em in a combination of black and white pepper,maybe a little cayenne.
heat some Peanut oil, ( not vegetable oil, not olive oil, very importent, only peanut oil can take the heat in the following steps) to medium heat.
a cast iron fry pan is best.
sautee some onion and garlic in the oil. When the onion and garlic are soft but not burnt remove from pan and bring the heat to high.
Drop in the filets, or whole bally hoo ( bills removed and gutted) and cook till blackened.
Remove from pan and reduce heat to medium.
When the pan has cooled somewhat, add fish, onions and galic and sautee for about 2 minutes.

Serve with some crusty bread and whine.

Let me know if you can get em down, I may try this some day.

Fresh caught Ballyhoo is actually very good. I never would have thought it but I tried it and it was white and fleaky and extremely tasty.

Now for the bunker I once watched my dog take a bite out of a bushel full of ground up bunker when we use to chum for bluefish outside of Pt. Lookout. Do this day I can't think of that split second event without gagging.
