Best Salad Ever

That is a pretty bold statement--- and admittadly, there are no "bests" in the culinary world--- but Nick's (Seabisquit) Avacodo salad is as good as it gets as a compliment with fish.
I made this conconction up last night and served with a grilled Yellowtail Snapper (can you believe that?--- a fresh Yellowtail in a fish market in Virginia).
This combination was so good that after I got up from the dinner table to relax, my thoughts were on how dang good my supper was.

As with most everything in life, I did not follow directions all the way. SWMBO is no fan of Cilantro so I substituted Medetrainian Basil (not as sweet as Sweet Basil-- has a bit of a peppery kick to it). Also, I could not find the type of peppers recommended and had to subsitute Jalapino's instead--- enough heat and perfect flavor for me

Here is the Greek Grouper Grim Reaper's recipe ( say that 3 times) once again:

Greek guacamole salad

2 or 3 RIPE avocados, peeled and chopped thick
2 medium GOOD tomatoes ($3.99 kind), chopped same size as avocados
Half, or less ,of a medium red onion thinly sliced
Fresh crushed garlic, 2 cloves (optional)
Two fresh chili peppers (or one red chili and one green serano) minced fine
Lots of finely chopped fresh cilantro (don't be shy here!)
Pinch or two of cumin powder
Sea salt & fresh ground pepper to taste
Splash or two good olive oil
Juice of one lime. May be a bit more

Combine all ingredients in mixing bowl. Season, taste and let chill before serving.

Glad to hear you enjoyed it Glenn. There is something magical about avocado, tomato, citrus and fresh fish.
Blowing 20+ again today, so my fresh fish will have to wait!

Just a rumor ole buddy. Just completed 3 straight serving food at the local Greek fest church fundraiser My feet are hurtin!
I do love catching and eating yellowtail though and GW's post got me thinking about headin south to find some later this year.
