1. Put dolphin cubes (3"x3" pieces) into a 9 x 13 glass baking dish
2. Fill dish to the top of fillets with white (zinfandel)wine.
3. Cover fillets with seasoned bread crumbs.
4. Add a slice of butter over each piece of fish and bake at 375 until
bread crumbs turn brown.
5. After bread crumbs brown, remove and add lots of shredded mozzarella cheese, (6 to 8) thin slices of tomato, fresh parsley , return and broil until cheese starts to bubble and turn brown.
6. Serve with a glass of white wine.
