    I had a friend growing up whose parents were both from the Phillipine Islands. One day he and I stopped at his house to get some homemade cantelope popsicles and we had several mullet we caught that were destined for bait after the popsicle cool down. His mother saw the mullet and went apeshit. "YOU NO USE FOR BAIT! IS GOOD EAT! I COOK FOR YOU" She insisted we give her the mullet and threatened to hold out on the popsicles. I caved in under the summer heat and gave em up(no big deal I could get more). She commenced to beating them flat with a wooden mallet.(heads, guts, bones, eyes, entrails, and all) She battered them with some ancient secret recipe I could have cared less about at the time as I was about to vomit at the thought of eating them whole. Well, lemme tell you. She cooked them to a near burnt crisp and the smell from the fryer sparked my curiosity. They were delicious. Who would a thunk it? I will never forget those Cantelope popsicles. I swapped mullet for popsicles for the rest of the summer. Despite the good taste of the fried mullet I could never get used to chomping down the bones and head. Haven't had fried mullet since. I sure wish I could get some more of those popsicles though.

    Sorry I didn't catch this thread earlier.

    I agree that there are too many to mention, and some have different purposes.

    For seafood and to kick up tacos etc my favorite is Cholula hands down.
    For Bufflalo wings, Crystal
    To kick up BBQ sauce, Tabasco Brand Chapoltle sauce
    And for super hot add just a teenie bit at your own risk, Grace Scotch Bonnet Sauce.

    That is my evil twin brother.
    The mullet were deep fried. I do not think the deep fryer would have helped the filefish though. Not even with the hotsauce.

    My favorite is Crazy Jerry's Mind Blowin' Hot Sauce. Great flavor and quite a bit of heat on the back end. If you can find it I would say you should absolutely get it cause you wont regret it!
