I like to grill and cook. Found a book on grillin with a lot of great recipes and cooking methods in it. Not sure if I can post the name of the book here but if you want it Pm me.
I use the book as a guidline for ingredients then modify with whatever is on hand, amounts, cooking time etc.. People tell me this is the best baked beans they ever had. Asked how do I get the smoky flavor in without adding artificial ingredients ( Well I'd have to kill em if I told em but you folks have given me so much info I feel the need to share)
This is not health food.
Cook at least a pound (or more to taste) of thick sliced bacon in a deep dutch oven kind of thing untill done the way you like it.
Dont be in a hurry, Many people cook bacon to fast, It's meat, give it time.
When it's done take the bacon out (LEAVE THE FAT) and cut/chop the bacon up and reserve.
Cook a good sized onion (or 2 finely chopped) slow (kinda low/ low,med heat) in the bacon fat stirring occasionally untill carmelized. I use vadilias. Over time the onion should color but not burn. This may take a little while but really brings out the best of the onions.
When the onion is ready,
Add to pot,
Chopped bacon.
6 cans navy or great northern beans ( I know you can get dried
do the soak and cook thing but this is easier)
Drain and reserve the liquid from the cans.
6/7 tablespoons brown sugar (dark is good, light will work).
6/7 tablespoons molasses
6/7 tablespoons maple syrup
6/7 tablespoons barbeque sauce (whatever you like will work
I'll put up a barbeque sauce recipe another time).
3/4 tablespoons dry mustard.
3/4 table spoons Worcestershire sauce.
3 table spoons cider viniger
1 TEASPOON Liquid Smoke (Secret stuff). Do not overdo.
This stuff is powerfull.
Salt and Pepper to taste (I use those grinder things and give it a
few good twists)
If you want some heat add in thin sliced Jalapeno peppers.
Leave or remove seeds depending on how hot you want it.
(watch them seeds, they be hot)
Stir it up real good. l bring to simmer for 30-40 minutes or
longer, stirring occasionaly.
The beans will turn brownish from the molasses etc.
If it looks a little dry add some of the reserved liquid from the beans.
Where there is a choice ie: 6/7 I use the low side but if you like
sweeter add a little more .
Where there is no choice leave it be till you try it.
