CL I have an offset Smoker that does a good job on roasts and small sucklings.
When I was a kid Dad used to do a 130# shoat on a pit he built out of cinder blocks. He would wake me up at 5:00 am to start the coals which we kept going for 12 hours. Bert

This whole thing stems from a evening at Nassawango where I "volunteered" to cook a pig for a event. The event was one of the more successful we've had in some time. The pig was awesome. Since the cooking process was so enjoyable, I thought a good winter project would be to build one.
The cuban cooker that Kahi offered is a good one. The blocks are a good plan, but I wanna be mobile..Hell, after recent review of my retirement investments, I'm probably gonna need some extra income. I know very little about cold smoking aside from how it applies to commercial tuna. My recent cooking process involved copious amounts of apple juice sprayed over the pig every hour. Nice... Open to all ideas as the build looms... |

I just scored a old 275 gallon oil tank. As soon as hunting season is over Ill be building one. Ill take pics as I go. I have to find some heavy grates and Ill be set.

Cut it the way your grill will be set up...usually take a 1/3 off the top for the lid. Use some kitty litter or speedy dry. After it absorbs as much as it will sweep it out. Then start a huge ass wood fire in it to burn or the residual crap off it. Give that a whirl for starters-

once you get your smoker built, definitely get a really hot fire going to burn off any residual gunk stuck to the inside. then make sure you clean it thoroughly. once you are satisfied that its good and clean, and your grates are welded in, build a fire in it like you are cooking a hog. it will teach you how to control the temperature without ruining a piece of meat, and it will season the grill as well. seasoning any new smoker is KEY to getting good smoked meat

Ditto the cat litter... before we built the wood fire in it we coated the entire inside with veg. oil. Then burned the wood fire. We did this a couple times to get ALL of the oil out.
