Apricot- Grilled Duck Breasts
This recipe I give credit to my mom. I've had it a couple of times and it is good eating!!!!!!!!!
1/2 c. apricot preserves
2 1/2 tbsp. sherry vinegar
1/4 tsp. salt
1/4 tsp. ground cumin
1/8 tsp. ground red pepper
4 (6oz) boneless, duck breast halves, skinned
Cooking Spray
1. Combine first 5 ingredients in a bowl, stirring with a whisk. Add duck; cover and marinate in refrigerator for 20 minutes.
2. Prepare grill to medium heat.
3. Remove duck from marinade, reserving marinade. Bring marinade to a boil in a small saucepan over medium high heat, and boil 1 minute. Remove from heat.
4. Place duck on grill rack coated with cooking spray. Grill 6 min on each side or until a thermometer inserted into thickest portion registers 170 degrees, basting occasionally with reserved marinade.
