10 minute meal, wonderful! And very low calorie..
I have only tried this recipe with halibut, But I am sure it would be great with any white fish. This is for four servings of 6-8 oz halibut steaks. Found it in one of my wife's cooking light magazine which usually suck but this is actually great!
Take a large non stick pan, and fry one piece of bacon until crisp.
Remove Bacon and keep for later. (Crumble it up)
Mix even parts kosher salt, ground black pepper, and smoked paprika (regular will work) and generously season both sides of fish.
Place in same pan with the bacon drippings and cook around 3 minutes a side or until fish will flake easily.
Remove fish and keep warm.
In the same pan, add 1-2 teaspoons of minced garlic and cook for one minute add your piece of bacon crumbled into small pieces for 30 seconds or so.
Then add a package of fresh baby spinach to the pan. Stir and cook until it wilts and serve on or under your fish.
Absolutely wonderful. Your wife will love it because it is under 300 calories a serving. But you won't think about that because you know it has bacon in it!

well thats not a bad thing... gonna have to make this one soon

I think I'll try it with 4 pieces of bacon and one piece of fish.
