2 quickies I use. Sorry there are no measurements, but I don't measure...
Tuna
Equal parts olive oil and lemon juice in a ziploc. Sprinkle in a bunch of dried oregano. Put tuna in ziploc and marinade for about 1/2 an hour. Grill and eat. BTW, this marinade is great for nearly any meat.
Mahi (would probably be great with striper too, just haven't tried yet)
Blacken fish with cajun spice (the spicier the better IMO). After fish is cooked, put equal parts of rasberry jelly and white vinegar in the pan and heat up. For a richer sauce, add a tablespoon or 2 of butter. Pour on fish.
