    Try taking your mahi fillet and sprinkle with your blacken seasoning and coat lightly with your favorite mayonaise and place in a hot cast iron skillet, no oil needed for this route. This is the way I blacken most of my fish, and man it is slammin'.

    Forgot I had put this up here.

    I'll have to try blackening that way... never tried that.

    Funny thing is, growing up, we always used mayo instead of butter to grill grilled cheese in a pan.
