Every Thursday my wife has some friends over, they paint and drink wine. We call it "Art Night". I sometimes will make a snack for them from whatever I fish I caught recently. Tonight I made my first "Striper Sandwitch". It was a big hit so I thought I would share how I made it.
First off you need to get on your jet ski and go catch a nice Striped Bass.
Fillet it up into 3/4 inch thick pieces.
Marinate ( I used a lemon peppercorn sauce) and bake fillets for 20 minutes at 450.
Then place fillets on bread of choice. I chose pumpernickel.
Slice up some tomato and onion.
Put onions, tomato and shredded mozzarella on the fillets and bread. Then place back in oven for two minutes.
Spread some Chipotle mayo on the other half of bread. Cover it up and dig in!
