Most people have mixed feelings about bluefish, but your experience will be different if the fish is handled correctly. First the fish's flesh should be clear and a shiny grayish blue color, with a deep red band running down the center of the fillet. Cooking will turn the flesh a lighter color. Bluefish have a very short shelf life, but most important after catching this fish you should gut and clean the fish and put on ice quickly. This will keep the flesh firmer and the taste milder along with giving it a longer shelf life.
