Exactly the same for me. The meat will get a grayish hue to it, but its only the outside 1/4 to 1/2 inch. I am in Florida... no way I am getting enough cold days to do a proper hanging, and I am not going to convert a fridge for that.
I would shoot anyone of those critters. I don't discriminate. If its legal for me to shoot, and I have freezer space, then down it goes. I had a Piebald (almost all white) come out on me last year on a hunt but she wouldn't get with in range. I will look for her this year! (these aren't the best pics, but you can see her.)
