How do you cook deer ribs

Not much of a hunter so when my neighbor brings me anything except for tenderloin I am at a lost.

Today he brought me a whole back leg and racks of ribs.

I loaded the leg with steak dust and some sea salt and but it on the grill for a slow cook. I just took a a peak and couldn't resist. So I sliced a piece off and holy shit I was ready to grab that thing it eat it like fred flintstone would grab a brontasaurus leg.

So how about some ideas for the rib racks. I was thinking about throwing it in the smoker for a few hours tomorrow. Any ideas on preparation or other ideas on what to do with the ribs? Thanks

    Bill

I was afraid someone was gonna say that but I am gonna give it a shot anyway. People have told me goose sucks. It is now my wife's favorite bird. People have told me Duck sucks - Jen will take all the CLEANED ducks that come our way. So while I too don't hold out much hope for the ribs I am gonna give it a shot. Not sure how but anyone has any ideas please let me know. BTW - thanks for the honest response.

You don't. What little fat is on a deer is not good unlike beef. Ribs are almost all fat.

I hope you can prove me wrong.

I usually let someone else have the ribs. Not much to them. I would boil them first if I had to eat them. Then season them, and cook as you like. Let us know how they turn out.

MAYBE WHEN YOU GIVE THEM TO THAT FLEA BAG DOG OF YOURS, HE MIGHT HAVE THE COURAGE TO TAKE ON YOUR NEXT NASTY ROOSTER. Seriously, I boil them off for the dogs, never found a good method for human consumption. Keep us informed.

Ribs are only good from a fawn in my experience.

The fat gets kinda funky and doesn't taste good.

Clean EVERYTHING off of the ribs that isn't meat or bone, rub them w/ spices and some oil. Wrap in foil and cook slow and low. Nothing wrong with adding some smoke to them, but don't let them dry out.

They can be edible if the deer isn't old.

Soak them in a wet brine, depending on how many you have, the ratio is a cup of sugar to a cup of kosher salt mix in a clean 5 gallon bucket fill half way with cold water and sugar salt mix add ribs. Brine over night, remove from brine, rinse coat ribs in a dry rub and smoke, be careful not to dry them out to much. halfway through you can baste with a sauce of your choice. Use cherry or apple wood for the smoke. Enjoy
