    GOOOOOD GROCERIES!!!

    Labor Day, me and the boys waxed the Doves on a neighbors Sunflower Field. Killed our limits in about 45 minutes. Very Happy Campers!

    Breasted them out and marinated a couple of nights in Terriyaki and Italian Dressing.

    Mom and Dad spent the weekend on Cedar Island where they brought back a mess of Mullets, Blues and some Drum.

    So last night I heated up the grease and fired the grill. Wrapped those doves in some Pork Jowl Bacon and put them to cookin. Then I fried the fish and put over a plate of stone ground yeller grits with Cracklin Cornbread. Oh yeah....I had a mess of Blue Crabs as appetizers......fried them in the shell!

    Man you talk about some GOOD GROCERIES!!

    FRIED HARD CRABS

    This is a downeast NC specialty...fried hard crabs.

    I typically would leave a small crab pot off the end of the dock when I lived on Harkers Island. I'd check it daily and just throw the crabs (live) right in the chest freezer down stairs. When I had a mess I would take them out, pop the back shell off, scrape out the gills, and just cut 'em in half right down the middle of the body.

    I'd wet 'em with some water and then dredge 'em in seasoned flour or a good seafood breader mix. Then just fry them in 350-375 oil until done...you want them crisp.

    Here's the deal...small crabs work best in my opinion. Some people like bigger crabs. With the small ones you can eat almost everything...shell and all...just like you would a soft crab. The small legs are easy to chew. The only parts you will have to crack and eat the meat out of are the claws and associated larger legs.

    Fried hard crabs...certainly not something for the light hearted.

    Try it...you will impress your friends!

    Oh...one word of warning:

    Be sure to chew the shells very well. The shell doesn't digest so well...and ummm...larger shell pieces aren't so easy to...well...they don't "pass" so easy if you catch my drift.

    LOL

    Good food sometimes come with it's own set of hazards!
