No real surprises here, but fairly unbiased. I cooked up a mess of GW Teal, Pintails (freshwater marsh) and Mallards tonight for the whole framily. All were prepared identically so I thought a taste test would be fun (SWMBO and daughter were just tickled shitless)
Birds were cooked medium to medium rare (actually the Teal were the rarest because I doubled each breast and the bacon wrapped around a couple times.) recipe below.
All except son #1 liked Teal the best ( his #1 was Pintail, then Teal, then Mallard last). SWMBO voted Mallard 2nd and Pintail 3rd. Daughter and son #2 liked Pintail 2nd and Mallard 3rd.
Comments were similar: Teal very Tender and Mallard somewhat tough and course texture to meat. Teal was the sweetest. Pintail was the least "sweet" with more of a Roast Beef flavor. Mallard had just a hint of liver flavor to it ( daughter only). Teal was the juiciest (this is because it was the most rare and had more bacon coverage). All in all the girls were not crazy about the Mallard, but did enjoy the Teal (a major step for the little princess)

Next test will involve the boys only: Halftime sandwich test. Which leftover is best sliced thin with swiss cheese and mustard?
Marinated breast fillets in OJ and dry Vermouth (that's all I had) for a couple hours after work. Liberal dose of Garlic Powder and black pepper. Rubbed crushed garlic on breasts, sprinkling of Sweet basil, and wrap in bacon ( doubled two Teal breasts together due to thickness of others). roast at 425 till medium rare (about 13 min.).
