    Duck taste test

No real surprises here, but fairly unbiased. I cooked up a mess of GW Teal, Pintails (freshwater marsh) and Mallards tonight for the whole framily. All were prepared identically so I thought a taste test would be fun (SWMBO and daughter were just tickled shitless )
Birds were cooked medium to medium rare (actually the Teal were the rarest because I doubled each breast and the bacon wrapped around a couple times.) recipe below.
All except son #1 liked Teal the best ( his #1 was Pintail, then Teal, then Mallard last). SWMBO voted Mallard 2nd and Pintail 3rd. Daughter and son #2 liked Pintail 2nd and Mallard 3rd.
Comments were similar: Teal very Tender and Mallard somewhat tough and course texture to meat. Teal was the sweetest. Pintail was the least "sweet" with more of a Roast Beef flavor. Mallard had just a hint of liver flavor to it ( daughter only). Teal was the juiciest (this is because it was the most rare and had more bacon coverage). All in all the girls were not crazy about the Mallard, but did enjoy the Teal (a major step for the little princess)
    Recipe: nothing special or fancy:
Next test will involve the boys only: Halftime sandwich test. Which leftover is best sliced thin with swiss cheese and mustard?

Marinated breast fillets in OJ and dry Vermouth (that's all I had) for a couple hours after work. Liberal dose of Garlic Powder and black pepper. Rubbed crushed garlic on breasts, sprinkling of Sweet basil, and wrap in bacon ( doubled two Teal breasts together due to thickness of others). roast at 425 till medium rare (about 13 min.).

You're cooking some prime quackers right there. All those memtioned are prime waterfowl. Only one way to go from here.

Although JMS will argue with me about teal
I think they are the best cooking and eating of all the ducks.
Followed next by wood ducks then widgeon.
White Fat birds seem to be the best eating.

Guys I went to school with swore by french fried scoter meat dipped in honey mustard And to think I forced fetched my old lab on Scoter. Figured if he coud hold one those oily stinkers he would hold anything.

teal are still my favorite....but that early season, mosquito larvae fed, hen greenwing just about ruin't me.

and dont get me started on that greenhead we killed in mississippi with a craw stuffed full of golden shiners. looked like someone had turned him a loose in a livebait well.

on the other hand, my black wino buddy, Curt, has never complained one bit. it does not matter what i take him.....deer, ducks of all flavors, doves, swans, king macks, live flathead catfish, etc, etc....mayonaise and gravy!

Well, the left over samich taste test results are in:
    The verdict?
The girls forfeited and didn't play.
Each son got half a Pintail samich and half a Mallard samich. They couldn't tell the difference and liked em both---
But what happened to the Teal samich?---

I ain't no fool, damn it was good.
