    Aging Geese?

    ok, I have read about and seen Glenn's pics about aging ducks and geese. I am in the process of doing this now so I have one ready to roast for christmas eve. But still being skeptical that I am doing this right.

    The birds are whole and plucked. I put them in the crisper at an angle that allows them to drain. I have taken them out every couple days and washed them off a little so that the outside does not dry out too much. Not much has drained from either goose and tonight I will turn them and lay them breast down as Glenn said to do. The were put in the fridge sat afternoon after the hunt and I am going to try to cook on on Sat or Sun as a test.

    Does all this sound right? Trying not to be a skeptic Glenn, but its hard!

    Has anyone else tried this?
